
THE MACHINES
Our lab features top-of-the-line, state-of-the-art Carpigiani batch freezers, which provide a wide range of precise production options. This versatility allows us to offer both a unique selection of perfectly frozen gelato styles, as well as freezer-stable, pre-packaged carry-out gelato cakes, confections, and containers.
THE PRODUCTION
All our gelatos, sorbets, and alternative diet flavors are handmade. The majority of our variegates and nut pastes are also made in-house. Our gelatos also feature proprietarily developed blends of vegan stabilizers formulated for their specific environments, which maximize their efficacy while limiting their concentration.
THE PRODUCER
With nearly two decades of mixology and discerning craft bar management experience, jiggered with 1 part sommelier, 1 part neurotic perfectionist, a dash or two of bitters, Italian training, and an 8-year quest of developing this concept and these flavors, it has been both deeply humbling and a tremendous honor to bring this vision to light.
